STRAWBERRY GOAT CHEESE CROSTINI


1 loaf french bread, sliced diagonally

1 Tbsp olive oil

2 cups sliced strawberries

4 oz goat cheese

2 tsp lemon zest

1 cup balsamic vinegar

1/4 cup brown sugar



Heat oven to 325 degrees. Brush one side of bread with olive oil and place on baking sheet. Toast for 2-3 minutes.


In a small saucepan, combine balsamic vinegar and brown sugar. Bring to a boil over medium heat and then reduce to a simmer. Simmer for 15-20 minutes or until mixture coats the back of a spoon. Let cool.


With a mixer fitted with the whisk attachment, beat the goat cheese until light and fluffy. Fold in lemon zest.


Spread goat cheese on bread pieces and top with strawberries. Drizzle with cooled balsamic glaze. Enjoy!
