WASHINGTON APPLE CAKE
3 eggs
2 cups sugar
1 cup oil
2 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup chopped walnuts
4 cups thinly sliced tart apples
Preheat oven to 350 degrees
Beat eggs until thick and light
Combine the sugar and oil, and pour into the eggs with a mixer on medium
Stir together flour, cinnamon, baking soda, and salt and to the egg mixture with the vanilla
Stir in the walnuts
Spread the apples in a buttered 13x9x2 inch pan
Pour the batter over the apples
Bake for one hour cool
Spread with Cream Cheese Icing (recipe follows)
8 ounces cream cheese
1/4 cup butter
2 teaspoons vanilla
1 pound powdered sugar
Beat together cheese, butter, and vanilla
Gradually add the sugar until fully smooth
