CHARD WITH BACON AND BEER


2 bunches fresh chard

1/4 lb local bacon diced

1 onion diced

1 tsp Tabasco sauce

1 Tbs apple cider vinegar

1 bottle local beer


Wash the chard (or other greens) in cold water and drain. Cut out the stems and set aside. Chop the leaves coarsely. Chop the stems more finely. Render the bacon in a large saucepan over medium heat until cooked through. Remove the pieces from the pan, turn up the heat and cook the onions and stems in the remaining fat until soft. Return the bacon to the pan and add the chopped chard. Add the beer, tabasco, and vinegar. Cook until the greens wilt into the liquid. Stir, turn down to a simmer, and cook for about half an hour. Serve as a side dish, or with rice and beans for a full meal.
