CURRIED BEET SALAD


6 medium sized organic beets

2 large Bermuda onions

Indian curry powder

salt and pepper


Preheat the oven to 350 - 375 degrees

Thinly slice the onions, and coat them with olive oil and a dash of the curry powder

Roast, stirring occasionally for around 20 minutes, until translucent with some browning

Halve and slice the beets

Coat with olive oil and curry as with the onions

Roast for 30 - 40 minutes until tender

Combine the beets and onions and season with salt and pepper
